Edamame Salad

My darling Joanna made this for me during the Summer 2008 and I have not stopped thinking about it! She found this recipe at Recipe Zaar. She added to it's goodness by adding cucumbers. Taking a lead from Jo I recommend you incorporating whatever farmers market freshness you have available!

Ingredients

  • 1 pound Frozen Shelled Edamame
  • 3 cups Frozen Petite Corn Kernels
  • 1 Red Pepper Chopped
  • 3/4 cup Green Onion Sliced
  • 1/2 cup Red onion Finely Chopped
  • 1/4 cup Italian Parsley Chopped
  • 2 tablespoons Fresh Oregano, Marjoram, or Basil Chopped

  • 1/3 cup Fresh Lemon Juice
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons EVOO
  • 3/4 teaspoon Salt
  • 3/4 teaspoon Fresh Ground Pepper

Directions

  1. Prepare edamame according to package directions. Drain and rinse with cold water. Set aside to drain thoroughly.
  2. Combine edamame, corn, red bell pepper, green onion, red onion, parsley, and oregano.
  3. In a large bowl, whisk lemon juice, mustard, olive oil, salt and pepper.
  4. Add veggis to bowl and toss to coat. Refrigerate until ready to serve.
  5. ENJOY!!
