Swedish Pancakes

These are my brother Robert's favorite!! Swedish Pancakes are just like crepes and can be served with all kinds of tasty toppings. Rob's favorite is quite untraditional, peanut butter and syrup! I myself prefer a thin layer of butter dusted with powdered sugar. Sometimes fresh fruit is good too! What do you like on yours?

Servings

Ingredients

  • 3 eggs
  • 1 1/4 cups milk
  • 3/4 cup Flour
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt

Directions

  1. Beat eggs until thick and lemon colored.
  2. Stir in the milk.
  3. Add dry ingredients to the egg/milk mixture.
  4. Drop by tablespoon onto moderately hot griddle. Flip and serve….

If I’m making this for company and I don’t want to be standing at the stove serving one at a time… I heat the oven to 200 degrees and put the finished goods in there covered with foil until I’m ready to serve. This keeps them hot and fresh!
