Vegetable Lasagna

I am forever indebted to Kath @ Katheats for posting this recipe. We make this at least once a week. I'll never go back to a meat-based lasagna.

Ingredients

  • 3 cups Pasta Sauce Clasico Spicy Tomato and Pesto
  • 16 ounce 2% Cottage Cheese
  • 1/2 cup Parmesan Grated
  • 9 Whole Wheat Lasagna Noodles
  • 8 ounce Mozzarella Cheese We prefer PepperJack Cheese
  • 4 cups Vegetables We use: Spinach, carrots, zucchini, and mushrooms.

Directions

  1. Preheat the oven to 400 degrees.
  2. Spray a 11 x 8 glass casserole dish.
  3. In a bowl combine cottage and parmesan cheeses.
  4. Make three awesome layers of: 3 uncooked noodles, 1 cup pasta sauce, 1/3 cheese mixture, 1/3 vegetables, and 1/3 mozzarella (or pepperjack!).
  5. Cover tightly with aluminum foil and bake one hour.
  6. ENJOY!!
