Vodka Sauce

Ingredients
- 1 pound Penne Pasta
- 1/4 cup EVOO
- 2 ounce Pancetta Diced
- 3 clove garlic
- 1/4 teaspoon Crushed Red pepper
- 1/4 cup Vodka
- 1 tablespoon Tomato Paste
- 1 - 35oz cans Whole Peeled Italian Tomatoes
- 2 sprigs Basil
- 1/4 cup Heavy Cream
- (To taste)
Directions
- In the EVOO saute the pancetta, garlic, and crushed red pepper flakes.
- Deglaze with the vodka.
- Add the tomato paste and cook for 1 minute.
- Mix in the can of tomatoes (including the juice). I usually smash up the tomatoes with a wooden spoon. If you want to get fancy you can do it by hand (uck!).
- Add the basil.
- Simmer over low heat for approximately 30 minutes (stirring every now and then).
- You might want to start the pasta about 10 minutes after this…
- Fish out those basil leaves and then stir in the heavy cream.
- Finish up that pasta and plate with this amazing sauce!!
