Vodka Sauce

Ingredients

  • 1 pound Penne Pasta
  • 1/4 cup EVOO
  • 2 ounce Pancetta Diced
  • 3 clove garlic
  • 1/4 teaspoon Crushed Red pepper
  • 1/4 cup Vodka
  • 1 tablespoon Tomato Paste
  • 1 - 35oz cans Whole Peeled Italian Tomatoes
  • 2 sprigs Basil
  • 1/4 cup Heavy Cream
  • (To taste)

Directions

  • In the EVOO saute the pancetta, garlic, and crushed red pepper flakes.
  • Deglaze with the vodka.
  • Add the tomato paste and cook for 1 minute.
  • Mix in the can of tomatoes (including the juice). I usually smash up the tomatoes with a wooden spoon. If you want to get fancy you can do it by hand (uck!).
  • Add the basil.
  • Simmer over low heat for approximately 30 minutes (stirring every now and then).
  • You might want to start the pasta about 10 minutes after this…
  • Fish out those basil leaves and then stir in the heavy cream.
  • Finish up that pasta and plate with this amazing sauce!!
